Aluminum doesn't go with all kitchens either. Nothing is going to satisfy everyone. Aluminum shows water spots much more than white...not really the most practical choice for a tofu press. (Black will show spots too)
I like the visuals of metal and bamboo. although I understand the concerns with food and aluminum (linked to Alzheimer's, etc) can another metal such as stainless steel be used?
Cleaning is absolutely critical if one of the reasons you eat soy frequently is due to food allergies. Actually, if the bamboo components could be separated for hand cleaning while the "business end" could be machine washed, that would be ideal.
It has to be aluminium because:
1. it looks classier - and the price can reflect this
2. it will match many kitchen appliances and surfaces
3. what a waste to use metal then hide it by coating it - the product should be true to itself - might as well save money and use plastic
4. as far as I can tell the aluminium won't touch any food if that annoys you (see http://www.quirky.com/projects/20 for the design)
5. easier cleaning, or at least will look like it will be easier to clean.

Aluminum is absolutely ILL ADVISED for any contact with food products.
Aluminum looks cheap.
Stainless steel is not listed as an option, but might suffice. Either way, metallic surface will show scratches more than shiny white.

Like others said , white and black dont go with all kitchens so A metal might be better than the white or black

I would go for aluminum/bamboo combination also, but since we got 1 vote, mine goes to white.
P.S. This should reduce cost, too: to simply buff up the already existing metal than to add plastic seems smart and cost-effective.
I agree w/ Avsar. A muted silver with the bamboo would look best, not so plasticky and cheap.

Due to the anodized nature of the aluminum this would be the best choice to reduce cleaning needs.
I am sure that the target market would appreciate the fact that it would create less waste.
