Remove the metal bar... gets in the way of the design. I agree about a collecting pan for fluid....
Perhaps it should drain to the back, with an endcap on the sides that could be taken out for draining and easy washing?
I agree with Luke, maybe like a tray underneath for collecting the water? I like this design the best...

How about a small receptacle to collect the moisture from the tofu.
The further Tony's comment, pressing uneven may be a major issue with a couple of the designs. You need to design it like a panini sandwhich maker, where their are 2 hinges instead of 1. This way, the lid comes down level no matter how thick the tofu is.
sloping design does not fit with rectangular cube of tofu that needs to fit here - gives the appearance that the pressing would be applied unevenly
I think it's important to keep the form factor slim, which is my main reason for voting for this one. If you could get rid of the wire bar somehow, that'd improve this one, IMO.
Connect my other comments to this design, where the top could be pushed down just with your hand to press the tofu, but the wire handle could be the integrated slicer with a stainless wire grid.
I think this is similar to The Future, but it looks cheaper. It might be cheaper to manufacture with that in mind, but The Future has better design.
